coconut lime chicken

I love all things that involve ginger, coconut milk, and lime. Don’t you?! This recipe doesn’t take up your whole evening. It is super healthy and is perfect laid over Thai jasmine rice and paired with your favorite crisp veggie (my go-to is snap peas drizzled with a chili sauce!)

4 servings

Total Time: 30 minutes

INGREDIENTS

4 chicken breasts, sliced in half to create two thin breasts or pounded to 1/2” thickness

Coconut or olive oil

1 shallot, finely diced

4 cloves garlic, minced

1 serrano chile, seeded and diced

1/4 cup chicken broth

1.5 cups coconut milk, full fat

1/3 cup lime juice, freshly squeezed

1 tablespoon fresh ginger, minced or grated

1 teaspoon light brown sugar

1/4 cup fresh cilantro OR Thai basil, chopped 

Salt and pepper

Cilantro OR Thai basil & lime slices for garnish, optional

METHOD

  • Place the chicken breasts between two pieces of parchment paper and pound them down to make them even in thickness OR using a sharp serrated knife, cut the breasts in half to create two thin breasts. Sprinkle each side of the chicken with salt and pepper.

  • Heat a large skillet over medium heat and add a couple turns of oil into the skillet. Once hot, add the chicken to the pan (you may have to cook the chicken in 2 batches depending on the size of your pan). Cook, without disturbing for 3-4 minutes, until a nice brown crust has formed. Flip and cook another 3-4 minutes on the other side, until the chicken is just cooked through. Remove chicken from the skillet and set aside.

  • Lower the heat to medium. Add more oil if needed and add the garlic, shallot and serrano to the pan. Cook while stirring constantly for 1-2 minutes.

  • Add chicken stock, coconut milk, lime juice, ginger, brown sugar and cilantro or basil to the pan. Stir to combine scraping up any browned bits remaining in the pan from when you cooked your chicken (thats extra flavor!)

  • Add the chicken breasts back to the skillet with the sauce. Cover and turn heat down to low. Simmer for 5 minutes to allow flavors to meld. Taste for seasoning and add more salt and/or pepper if desired.

  • Spoon some sauce over everything for serving. Garnish with cilantro or basil and lime slices (optional).
