chia breakfast pudding
This recipe can be made with store bought or homemade almond milk. A perfect option for a make ahead breakfast the night before, just grab, add your toppings and go!

INGREDIENTS
2 cups unsweetened almond milk
1/2 cup chia seeds
1/2 teaspoon vanilla extract
1-2 tablespoons pure maple syrup or honey
Topping: Seasonal fruit, almonds or other nuts
METHOD
Combine almond milk, chia seeds, vanilla, and maple syrup or honey. Mix well until combined and it begins to thicken. Store covered in the refrigerator overnight or at least one hour.
Stir well before serving and a splash of water to the pudding if it becomes too thick.
Top with fresh fruit and nuts of your choice.
