watermelon, feta & balsamic

This salad comes together in a snap and is so refreshing that it should be at every summer gathering this summer. My sister-in-law, Kristin, introduced me to this delight and I am so thankful she did! Thanks, sis! MAKES

8-10 servings

INGREDIENTS

1 ripe seedless watermelon, cut off the rind & chunked

1 cup of basil, chiffonade

8 ounces of Bulgarian feta, chunked

1/4-1/2 cup balsamic glaze, homemade or store bought

maldon sea salt


METHOD

  • Arrange the chunked watermelon on a platter and sprinkle with the feta & basil. (To chiffonade basil: Stack the leaves on top of each other, gently roll them up together, and then use a sharp knife to slice them into thin ribbons. Nothing more to it than that!)

  • Lightly drizzle the platter with balsamic glaze and sprinkle with the flaky sea salt.

  • Serve immediately.
