LET’S CHAT RECIPES REALLY QUICK. THERE IS NO WRONG WAY TO EVER MAKE ONE! USE MY RECIPES AS A GUIDE AND MAKE THEM ACCORDING TO WHAT YOUR PALATE CRAVES. HERE ARE SOME “RULES” I’D RECOMMEND TO FOLLOW AS YOU COOK:

  • When I mention salt I am referring to kosher salt (iodized has a more metallic flavor). I love to use the Crystal brand as the flakes are a finer grain which makes it easier to control the seasoning level. Adjust accordingly to whatever you are using for your dishes.

  • Ground pepper= freshly ground. There is nothing wrong with using otherwise if that’s what you have on hand, but freshly ground will give a bigger flavor so you may need to add more.

  • ALWAYS taste every component of every dish (if there is a sauce, a grain, and a protein, taste them individually and adjust the seasoning accordingly before putting them all together… this is important!).

  • If there are any kitchen tools mentioned that you do not have on hand, don’t feel that you can not create the dish. Most of the utensils needed can be replaced with another… never say never! (Ask me what you could use instead or our handy friend, Google!)

  • As with the kitchen tools, the same goes with ingredients. If you do not have something listed, usually the dish can move on without it or be replaced with something else! And never be afraid to add your own favorites, I’d love to hear other variations that are tried!
