curry chicken salad

This is comes together SO fast and is perfect on it’s own, loaded into a lettuce cup, piled high on a cracker or layered between two slices of bread topped with some fresh bacon, tomato & lettuce as a sandwich (if you choose the sandwich route add some good honey mustard, my personal fave!). This recipe uses mainly household staple items, I hope you enjoy it as much as we do!

MAKES

2 large servings or 4 small

INGREDIENTS

for the chicken:

2 uncooked chicken breasts

2 teaspoons olive oil

1/4 tsp. curry powder

1/4 tsp. garlic powder

Pinch of each salt & pepper

for the dressing:

1/2 cup mayo (or for a lighter option: 1/4 cup mayo, 1/4 cup Greek Yogurt)

1 teaspoon honey mustard (optional)

2 teaspoons curry powder

Handful of golden raisins

Handful of fresh parsley or cilantro (or sub 2 teaspoons dried parsley)

1 tablespoon red onion, finely chopped

1 stalk celery, finely diced

Salt & Pepper to taste

Optional additions: crumbed bacon, cayenne for heat, pine nuts, cashews, green onion

METHOD

  1. Roast the chicken: Preheat the oven to 350˚F. On a small baking sheet, place the whole uncooked chicken breasts. Cover each breast with the olive oil, turning to ensure both sides are coated. Evenly cover each breast, on both sides, with the curry powder, garlic powder, salt & pepper. Once oven is preheated, bake for 20-25 minutes until cooked thoroughly and the internal temperature is 165˚F.

  2. Make the dressing: While the chicken is roasting, in a medium bowl mix together the mayo, honey mustard, curry powder, raisins, red onion, celery. Hold off adding the fresh herbs until right before serving (if using dried herbs, you can add them in now). Set aside. Prep any “optional additions” now and add to the bowl.

  3. Once the chicken is finished and cooled enough to handle, dice the breasts into bite sized chunks. Stir the chicken into the dressing mixture. Add the fresh herbs if using, and a good pinch of salt & pepper. Mix well and then taste for seasoning. Add more curry powder, salt, pepper, herbs to your liking!

  4. Serve with: Crackers, naan bread, by itself or make it into a sandwich!
