I have ALWAYS loved ramen noodle anything… sorry, can’t help it. So to make this version a little more on the healthy(er) side, I add a ton of veggies and sliced almonds & edamame for some protein gains. All the goodness is then tossed in a delicious, light sweet & salty vinaigrette.

This recipe comes together so fast with no cooking involved, just some knife work, a quick whisk of the wrist and some mixing. This salad is perfect for any party, picnic, or weekly meal prep for on the go!

INGREDIENTS

SALAD

2 cups red cabbage, thinly sliced

2 cups green cabbage, thinly sliced

1 bag broccoli slaw

1 cup broccoli, small bite sized

1 carrot, shredded

2 green onions, thinly sliced

1/2 cup edamame, unshelled

Sliced almonds

Sunflower seeds

2 packages of Maruchan Ramen Noodles (discard the seasoning packet)

Optional: sesame seeds for topping

VINAIGRETTE

1/2 cup apple cider vinegar

1/4 cup EVOO or Canola Oil

2 tablespoons soy sauce

2 tablespoons brown sugar

1 teaspoon garlic powder

1 teaspoon black pepper

*Tip: I usually like to double the dressing recipe in case the salad mixture soaks it up. It’s also great to have some extra on the side of you don’t use it all for the next day. Just depends on how saucy you’re feelin’!


METHOD

  • Slice the cabbage, shred the carrots, and toss all of the salad ingredients together in a bowl besides the ramen noodles.

  • Discard the seasoning packet from the ramen noodles. Place the noodles into a plastic bag and using your hands crunch the noodles until they are broken apart (I like to leave some bite sized chunks in mine!) . Place a colander in the sink, pour the noodles into it, and run hot water over the noodles for just a minute or so (or longer if you prefer a less crunchy noodle. I personally love the crunch for texture!). Add the noodles to the salad mixture.

  • In a small mixing bowl, whisk together the apple cider vinegar, oil, soy sauce, brown sugar, garlic powder, and pepper.
