Veggies & Sides
Sides are the maker or breaker of a plated dinner, agree? I mean, they are really just as important as the main dish, and even sometimes can BE the main dish. You can’t go wrong with these options.
creamed corn polenta
It’s my favorite season of the year: FRESH SWEET CORN SEASON! I have always loved to make creamy, buttery polenta so combining that with fresh sweet creamed corn was a no-brainer and you GUYS, it turned out AMAZING. It is kinda like corn casserole but, dare I say, it may even be better.
pocket potatoes
This is pretty much the best version of a deconstructed baked potato that could quite possibly make you never want to make a regular baked potato ever again. The key to this recipe is the onion that gets so sweet, soft & buttery while they steam in the pocket with the potatoes… even if you aren’t an onion fan (I’m actually not one myself) you will want more and more of them in this recipe!
sour cream mashed potatoes
Creamy mashed potatoes loaded with sour cream & butter? Yup, I’m in. These are my most favorite way to make my mashed potatoes and I think they key to why these are so texturally wonderful is to use Gold Yukon Potatoes instead of Russet.
