This is SO easy to make. The tempura batter takes two seconds to whisk together and the ricotta herb spread only involves chopping up some fresh herbs (but dried herbs can be used as a substitute!).
creamed corn polenta
It’s my favorite season of the year: FRESH SWEET CORN SEASON! I have always loved to make creamy, buttery polenta so combining that with fresh sweet creamed corn was a no-brainer and you GUYS, it turned out AMAZING. It is kinda like corn casserole but, dare I say, it may even be better.
kung pao crispy brussels sprouts
I LOVE me some asian flavors on pretty much everything but ESPECIALLY on crispy, flaky brussels. I had some in my refrigerator that needed to be used and I thought, hey, why not create my own version?! Quite frankly, no reason came to mind for why not, so to all our delights, here it is!
french green bean gremolata with a twist
I LOVE Gremolata. Traditionally, it a blend of fresh parsley, garlic, & lemon but this version features a twist by replacing the lemon with orange, along with some other ingredients… and oh, what a delightful twist it is! By blanching the beans prior to sautéing, the color is at its most vibrant green.
honey cumin roasted carrots
These carrots, I mean, can you even?! They are gorgeous, sweet yet, savory, and have a pop of brightness being topped with pomegranate seeds. They are the perfect accompaniment to any protein dish and will add an elegance to every dinner.
roasted acorn squash with herbed apple couscous
This dish is amazing on it’s own, as a starter or as a side! I can easily picture this on my guests Thanksgiving plates before the turkey, mashed potatoes & gravy make their debut.
roasted broccolini with garlic, lemon & parmesan
This is a consistent go to in my nest and always gets praise from anyone who tries it. The broccolini has a depth of flavor from roasting with a nice helping of garlic then being finished with a fresh squeezed lemon and parmesan sprinkle. Trust me, it will turn into a household staple for you also!
sautéed garlicky spinach
The veggie side dish in all the land has to be this one. Spinach sautéed with garlic and a little salt & pep is always so refreshing and also very healthy, I always keep a container of pre-washed spinach in my refrigerator because it will always go to use either in a smoothie, an omelette, a lunch salad, or as a hot veggie side like this one!
walnut, parsley, & pecorino stuffed mushrooms
I love these stuffed mushrooms so much. If you aren’t careful, you’ll suddenly realize you’ve eaten at least 8 of them and didn’t save any for your guests! Whoops. These are filled and baked with a medley of garlic, finely chopped walnuts, fresh parsley and nutty pecorino.
perfectly roasted veggies
There is nothing more delicious than a perfectly roasted vegetable that is tender yet still crisp. I absolutely love to pair these with my Herbacious Veggie Dip for the perfect party appetizer or side dish to any entrée.
double baked potatoes
These double baked babies are the perfect accompaniment to any meal! My favorite pairing is with a freshly grilled steak. Potatoes are literally one of my most favorite starches on this planet, especially potatoes loaded up with sour cream. Can’t help it, I love it, and sorry not sorry!
