Salads & Bowls
If the word “salad” brings the word “boring” to your mind next, I’m gonna go ahead and change that for you right here and now. Below you will find salads and bowls alike that are filled with simple ingredients but loads of flavor. Trust me.
green goddess dressing
Looking for a go-to, healthy dressing that is packed with herbaceous flavor and is able to be put on anything?! Yes, I mean anything… chicken, salmon, salads, veggies, meats… it compliments them all! Just gather up a large handful of assorted herbs and you’re already halfway there.
curry chicken salad
This is comes together SO fast and is perfect on it’s own, loaded into a lettuce cup, piled high on a cracker or layered between two slices of bread topped with some fresh bacon, tomato & lettuce as a sandwich (if you choose the sandwich route add some good honey mustard, my personal fave!). This recipe uses mainly household staple items, I hope you enjoy it as much as we do!
crispy brussel sprout salad with maple dressing
This is it. The salad that will leave you wanting it over and over and over and over… you get the picture.
tomato coconut cauliflower curry
This plant-based dish has it all: creaminess from the coconut milk, sweetness from the potatoes, crunch from the cauliflower and an aroma of curry from the spices. Give this one a try!
sweet potato chickpea buddha bowl
This bowl is filled with all the right colors, textures and flavors. But the real star here, on top of all the veggies, is the Tahini dressing. I could put it on eeerryyythang! You’ll want to make an extra batch just for fun.
thai papaya salad with mango, jalapeño & crushed peanuts
Are you ready for the salad that will leave you dreaming about it? This Thai inspired dish is so refreshing and is unlike any other medley that you have tasted before. The papaya has a bright, juicy flavor and when paired with Thai red chili peppers & jalapeño it is given an essence of heat but is cooled with the sweetness of mango and citrus of fresh squeezed lime. A sprinkle of palm sugar and crushed peanuts brings this dish all the way home. I promise you will want to make this one again and again.
pesto quinoa salad bowls
A medley of all things healthy, fresh, herby, lemony, crisp, and savory. Eat it warm with the freshly cooked quinoa and roasted veggies or meal prep for your week and have a cold bowl ready to go!
mediterranean quinoa bowl with roasted red pepper sauce
Looking for a healthy, gluten free lunch option that will tide you over and satisfy the taste buds? Look no further, it has arrived. I love this mix of flavors- savory, salt, fresh and filling. This would also be delicious topped with grilled chicken for more protein or take away the feta to make it dairy free!
watermelon, feta & balsamic
This salad comes together in a snap and is so refreshing that it should be at every summer gathering this summer. My sister-in-law, Kristin, introduced me to this delight and I am so thankful she did! Thanks, sis! A medley of fresh basil, chunked feta, juicy watermelon & a drizzle of balsamic… what are you even waiting for? Go make it now and let me know what you think!
grilled peach & arugula salad with white balsamic dressing
Summer is right around the corner and to me, the complexity of flavors in this salad are the definition of summertime. The tart pickled onions, warm grilled peaches, creamy blue cheese, and juicy pops of blueberries all drizzled under a blanket of a light & sweet vinaigrette… you’re welcome.
