sweet & salty rice
This rice is a constant go to in the nest and when you make it yourself, I have no doubt that you will see why. I love this rice as a side for dishes but also have no problem eating a bowl on its own when the craving ensues.
One thing I love about this rice is that the coconut milk adds enough sweetness so if you are trying to cut sugar out, you can absolutely skip that ingredient OR a substitute I’ve grown to love is using coconut sugar instead of refined!
I suggest pairing this rice with Sticky Chicken!

MAKES

Total Time: approximately 30 minutes
INGREDIENTS
1.5 cups jasmine white rice
1 (13.5 oz.) can full fat coconut milk
1/4 cup refined sugar (or substitute coconut sugar)
1 teaspoon salt
METHOD
In a medium pot over medium heat add the rice, full can of coconut milk + refill the coconut milk can with water and add water to pot, sugar & salt.
While bringing to a boil (turn up the heat to medium high if needed), stir occasionally to incorporate the ingredients and to allow any of the hardened coconut milk that may have been in the can to melt into the mixture.
Once boiling, turn the heat to a simmer and place the lid on the pot. Check the rice at about 20 minutes to see if there is still any liquid in the bottom of the pan, If so, let go for another 5 minutes. Repeat this step until all liquid is soaked into the rice. Remove the pot from the heat and let sit for 5 minutes before fluffing with a fork. Enjoy!!!
