kung pao crispy brussels sprouts
I LOVE me some asian flavors on pretty much everything but ESPECIALLY on crispy, flaky brussels. I had some in my refrigerator that needed to be used and I thought, hey, why not create my own version?! Quite frankly, no reason came to mind for why not, so to all our delights, here it is!
french green bean gremolata with a twist
I LOVE Gremolata. Traditionally, it a blend of fresh parsley, garlic, & lemon but this version features a twist by replacing the lemon with orange, along with some other ingredients… and oh, what a delightful twist it is! By blanching the beans prior to sautéing, the color is at its most vibrant green.
roasted acorn squash with herbed apple couscous
This dish is amazing on it’s own, as a starter or as a side! I can easily picture this on my guests Thanksgiving plates before the turkey, mashed potatoes & gravy make their debut.
roasted broccolini with garlic, lemon & parmesan
This is a consistent go to in my nest and always gets praise from anyone who tries it. The broccolini has a depth of flavor from roasting with a nice helping of garlic then being finished with a fresh squeezed lemon and parmesan sprinkle. Trust me, it will turn into a household staple for you also!
sautéed garlicky spinach
The veggie side dish in all the land has to be this one. Spinach sautéed with garlic and a little salt & pep is always so refreshing and also very healthy, I always keep a container of pre-washed spinach in my refrigerator because it will always go to use either in a smoothie, an omelette, a lunch salad, or as a hot veggie side like this one!
