roasted broccolini with garlic, lemon & parmesan

This is a consistent go to in my nest and always gets praise from anyone who tries it. The broccolini has a depth of flavor from roasting with a nice helping of garlic then being finished with a fresh squeezed lemon and parmesan sprinkle. Trust me, it will turn into a household staple for you also!

MAKES

4-6 servings

Total Time: 25 minutes


INGREDIENTS

3 bunches of broccolini (3-4 stalks per serving), washed, leaves removed, ends trimmed

Extra virgin olive oil

3-4 garlic cloves, minced

Salt and pepper

Crushed Red Pepper, optional

1/2 lemon, juiced

1/4 cup parmesan reggiano, grated


METHOD

  • Preheat the oven to 375˚F. Line a baking sheet with foil or spray with cooking spray. Lay the broccolini down in an even layer.

  • Drizzle olive oil over broccolini and toss to coat, you want a light layer of oil to completely cover. Take the minced garlic and using your fingers, sprinkle it evenly over the broccolini the best as you can. It is okay if some clumps are present. Generously pinch a layer of salt and pepper over the broccolini.

  • Place in oven for 12 minutes. Remove and sprinkle the broccolini with crushed red pepper to your liking (optional). Place back into the oven for another 7-8 minutes.

  • Once the broccolini is tender to a fork and browning on the crowns, remove from the oven. Squeeze the lemon juice over the broccolini and generously sprinkle with the parmesan. Serve immediately.
