I am a huge lover of anything curry. Then when it is combined with coconut milk and a ton of veggies… I turn into a triple lover of it! It is decadent and creamy with a hint of spice. I would love this over Jasmine White Rice as an alternative to the rice noods too!

This is quick to come together recipe that will make any weeknight dinner feel just a little more special. The shrimp is sautéed to a lightly browned perfection with notes or garlic, ginger and just a tad bit of spice and then is layered over rice noodles dressed in a beautiful coconut milk sauce.
